Wildflower is a tribute to the women who brew at Ichishima, and to one in particular. Kazuko Shiiya started in the brewery kitchen, cooking for the workers through the brewing season, and watched them brew. One year she asked to join the production team. She worked her way up to assistant brewer, then sat the certification exam, and in 1975 became the first woman in Japan to pass as a first-grade licensed brewer. She stayed until 2003.
The Ichishima family has made sake for more than 200 years, and the brewery was among the first in Japan to employ women as brewers.
Lychee, apple, and strawberry. Complex and sweet, with good acidity.
Serve chilled. Good as an aperitif, and with light seafood, salad, ceviche, or moderately spicy food.
