Wa is named for the brewery's slogan, wajō ryōshu: harmony brews good sake. The idea is that people working well together is what makes it, which is also an argument for opening this one with other people.
Yamada Nishiki milled to 50% remaining. Unusually tropical for a ginjo: banana, melon, lychee, and white peach, with steamed rice and something like almond jelly underneath. Rich and smooth on the palate, sweet at first, then a clean acidity that cuts through. Dried apricot and a nutty caramel note on the way out.
Cold or lukewarm. Surprisingly good with a tomato salad.
