Uonuma Noujun Junmai

The rice here is polished to 80%, meaning 80% of each grain is left intact. Most premium sake mills far more away. Keeping the grain is where the body and the flavor come from.

Butterscotch, caramel, and maple on the nose. Toasted rice through the middle, with honey and another touch of caramel. Smooth, round, and full.

Good chilled, and better still as it comes up to room temperature.
