Tensei Song of the Sea

Song of the Sea is named for the brewery's seaside location in Kanagawa, and the sake carries a saline note to match, something like saltwater taffy, sweet and mineral at once.

It's brewed with No. 9 yeast obtained directly from the brewery that first isolated it, rather than from the national institute that distributes it. Apple, banana, and melon run through both the nose and the palate. Intense, finishing crisp and clean.

Good with grilled lamb chops, couscous, or paprika chicken.
