Tenjin Bayashi Junmai Ginjo

Uonuma Brewery is a small family operation on the mountainside above Tokamachi in Niigata prefecture. Tenjin Bayashi is named for a local celebratory song, originally sung to call for a good rice harvest and still performed at the start of the brewing season, at rice planting, and at construction and water-filling ceremonies.

Brewed with Koshi Tanrei, Niigata's own sake rice, grown locally and milled to 50%, with Niigata S9 yeast and underground water from the Uonuma mountains. Fermented slowly at low temperature through the Echigo winter.

Straightforward, refreshing, and smooth, in the dry, clean Niigata style.

Good with fish meunière, yakitori, sukiyaki, sashimi, and nabe.
