Suigei means drunken whale, after a Tosa lord in Kochi known for how much he ate and drank. The brewery builds its sake to sit alongside whatever is on the table, and this one changes character with temperature: chilled it is fresh and restrained, with a quiet ricey nose, mild umami and clean acidity. Warmed it opens up, longer and rounder, with more depth in the finish. Very dry throughout, with fennel and something hop-like running through it and an unripe strawberry note underneath. Clean and light in texture.
Good with vegetable tempura, albacore sashimi, and salads in a ginger-soy dressing.
