SEVEN 25%

SEVEN marks the seventh generation of the family running Shirataki Shuzo, the Echigo Yuzawa brewery behind Jozen and Uonuma Noujun.

The rice is polished to 25%, meaning three quarters of every grain is milled away. Daiginjo only requires 50%, so this is twice the milling the grade asks for, and it's where the clarity comes from.

White peach, Kyoho grape, and Japanese pear on the nose. Soft as light snow in the mouth, with a refined sweetness like wasanbon, the fine-grained Japanese sugar. The finish brings minty herbs and fresh black pepper, pulled together by a gentle acidity.
