Rihaku Dreamy Clouds

Nigori is partially filtered sake, with rice particles left in for the cloudy texture. Rihaku's Dreamy Clouds is polished further than most nigori, which gives it a brightness and clean structure the style usually doesn't have. Cream and steamed rice on the nose, pear and toffee on the palate, with a slight effervescence and a surprisingly dry finish.

At Sake Bar Gaga, we serve Dreamy Clouds chilled with our Snow Crab Croquette. The sake's creamy nigori body echoes the croquette's béchamel interior, the slight effervescence cuts through the fried richness, and the dry finish lets the snow crab's delicate sweetness come through.
