In the 1960s, Sengetsu's third-generation distiller Toyoka Sosogi began putting shochu into oak casks. Shochu was aged in clay pots then; almost nobody used wood. Three generations later the house still does it, and Mugon is the long end of that practice: at least ten years in evergreen oak in the Hitoyoshi valley.
Amber in the glass. Mild and sweetly fragrant, with banana and vanilla and a roundness that only comes from sitting still for a decade.
