Midorikawa Green River Honjozo

Midorikawa sits in Uonuma, in southern Niigata, between the Uono River and some of the most famous rice paddies in Japan. Their water comes from a well on site, drawn from 50 meters down and fed by snowmelt.

This honjozo is the more compact version of their junmai: silky, dry and clean, with a defined, precise finish. It's a food sake first. Chilled, it sits quietly beside raw oysters. Warmed, next to grilled chicken, it turns creamy, almost buttery.

Brewed from a blend of local rice milled to 60%.
