Yuzu is the Japanese citrus that tastes like mandarin orange, Meyer lemon, and key lime at once, more aromatic than any of them and far too sour to eat on its own. This is its juice, from fruit grown around Izumo, blended into sake.

Pronounced tartness up front, Meyer lemon and mandarin, then a finish that turns sweet.

On the rocks with a splash of soda, or in a cocktail.

Izumo Fuji has brewed in Shimane since 1939, now under the third generation of the Imaoka family.
