Amabuki brews with yeasts cultured from flowers rather than the usual laboratory strains, and this one comes from sunflower. It gives a rounder shape than a standard yeast would, and the sake stays unpasteurized, so it drinks fresh and bright: lychee and melon up front, wildflowers and a touch of anise underneath, then dry and clean off the finish.
Keep it cold, and pour it cold.
