Aizu Shikon “ Crane Castle”

A junmai built big and then brightened. Peach, nectarine, and honey, with a touch of clove. It drinks lighter than its flavor suggests: fresh and crisp with a little spritz, semi-sweet, and a quick umami finish.

Good with nabe and hot pots, richer sashimi, yakitori, and rich Western cooking.
