Cocoa and clove on the nose, with a smoky, nutty edge underneath and a lift of orange blossom and tangerine. Melon and orange on the palate with clove running through. Dry, with a lightly savory finish.

The local Hida Homare rice carries the umami and gives it a rustic character.

It comes in 900ml because that's the smallest bottle this brewery makes, and always has.

Good with miso glazed salmon, pork belly buns, or charred octopus.
