SUIGEI Junmai Daiginjo Harmony

Suigei brews several junmai daiginjo separately, each with its own character, then blends them into this one, using two different yeasts to get there. What comes out is tropical on the nose: strawberry, mango, papaya, honeydew, ripe pear, tangerine, with sweet rice underneath. The palate is round and juicy, full without turning sticky, and then the Suigei finish arrives and cuts it clean, mineral and just off-dry.
Serve it cold. It goes with most things but is at its best next to cold dishes: crab, lobster, sweet shrimp, white fish sashimi, or a cheese and fruit plate.
