Senkin Nature

Senkin's Nature is the brewery's most uncompromising bottle: only rice, koji, and water, nothing else added. It uses heirloom rice grown organically and barely polished, fermented in a wooden kioke vat with the wild yeast that has lived in the Senkin brewery for over 200 years. The bottle sits in the same lineage as natural wine and craft beer, and it drinks accordingly: spritzy, light, water-like in texture, with marmalade and salted butter on the nose and a bright citrus finish.

At Sake Bar Gaga, we serve Senkin Nature chilled with our Seasonal Fruit Shiraae. The peach in the dish meets the peach on the sake's nose, the spritzy, water-like texture cuts through the creamy tofu, and the bright citrus finish lifts the basil and shungiku.
