Senkin Classic

Senkin's Classic is built around Edo-gaeri, the philosophy of returning to Edo-period brewing techniques (1603-1868). The bottle uses heirloom rice restored to its original strain, a kimoto starter, and the native yeast that has lived in the Senkin brewery for over 200 years. The wild yeast gives Classic its signature ripe banana aroma, with an acidity that comes from lactic and malic acids multiplying rather than adding.
