Senjo Junmai Daignjo

Senjo is named for Senjōgatake, a 3,000-metre peak in the Japanese Alps. The brewery draws its water from wells sixty metres down, fed by snowmelt filtered through that same mountain. The name and the water are the same thing.

Hitogokochi, Nagano's own sake rice, polished to 40% remaining. A floral nose, then tropical fruit cut with star anise. Round and juicy, finishing soft.

Good with fried seafood, vegetable tempura, and, unexpectedly, a Caesar salad.
