Koshu is aged sake. It turns amber, and it goes savory in a way that surprises people who know sake as clean and light.
This one was barely polished at all, 85% of each grain left intact, so the protein that becomes umami stayed in. Then it was aged. Those two choices together are why it tastes the way it does.
Soy sauce, mushroom and hazelnut on the nose, with toffee underneath. Off-dry, with baked apple, brown butter and chocolate, finishing savory and faintly smoky.
Drink it after dinner, with nuts and chocolate. If you like dry sherry or off-dry Madeira, this is the sake equivalent.
