Ninki Brewery is in Nihonmatsu, Fukushima, not far from where Eiji Tsuburaya grew up, the man who built Godzilla. The bottle takes its premise from Shin Godzilla, where Operation Yashiori borrows from an older story: Susanoo the storm god gets the eight-headed dragon Yamata no Orochi drunk on Yashiori no Sake, then kills it. Ninki's brief was to brew the modern equivalent.
What's in the bottle is a serious junmai daiginjo. Rich, complex and balanced, neither sweet nor sharp, brewed in traditional wooden tanks and aged in bottle rather than tank so it doesn't oxidize.
Serve it cold, 46 to 59°F, in a large wine glass. What you do with the weapon after that is your business.
