Doburoku is sake in its oldest form. Completely unfiltered, rice and all. Cloudy, textured, alive. Most breweries don't make it anymore, and the ones that do treat it as a specialty.

The blush color of Niwa no Uguisu's Pink comes from an in-house red yeast that is notoriously finicky and rarely used, and the sake was brewed specifically to achieve the experience of biting into a fresh strawberry. Sweet and tart, with a soft floral aroma and a clean, fruit-driven finish. The koji adds just enough tang to keep it bright.

At Sake Bar Gaga, we serve Doburoku Pink chilled with our Blue Cheese Ham Cutlet. Eat the cutlet first, then drink the doburoku in place of the sauce, and let the two finish each other in the mouth. This is one of EUREKA!'s signature pairings, built on kōnai chōri, the Japanese tradition of letting food and drink complete a dish together, rather than asking the palate to reset between bites the way wine does.
