A junmai daiginjo from Yamada Nishiki, polished to 40–45% remaining, then matured for a year before bottling.
Give it a few minutes in the glass. The nose is closed at first, then opens into ripe red apple, fresh cream, and acacia. Soft and light on the palate, barely sweet, with a clean acidity and a long finish that ends on a touch of bitterness.
Lightly chilled, with mildly seasoned food.
