Kirishima developed its own sweet potato for this one. Kirishima 8 is their trademark for the Kiri N8-1 variety, which they grew exclusively, and its successor Kiri N8-2, and the potato itself is where the fruit comes from. They ferment it with two yeasts: their own Elegance Yeast alongside the strain used for Kuro Kirishima. What comes out is closer to fruit than to spirit, muscat grape and mandarin orange, juicy right through the middle.
