IZUMIBASHI WHITE KOJI

Sake is made with yellow kōji. Shochu is made with white kōji, which produces citric acid. This one uses both.
The white kōji brings a lemon and green apple tartness, the yellow brings umami and sweetness, and the label runs a gradient from white to yellow to show the two meeting. The idea came out of Izumibashi's work on amazake.
Banana, white flowers, honey buttercream, and something like lemon biscuit. Lush fruit on the palate but mellow, with a mineral edge underneath. If you drink white wine, this will feel familiar.
