Beshi is Horaisen's best-selling bottle, and the lightest junmai they make.
It's brewed with Yume Sansui, a sake rice developed for the cold mountain uplands of Aichi by the prefecture's agricultural research station and food technology centre, together with the brewery itself. They helped make the rice to suit the place they brew in.
A mild nose that grows as it warms: spice and steamed rice, ripe stone fruit, a note of bay leaf. Light through the middle, with a refreshing acidity and a smooth, dry finish.
The name, and the calligraphy on the label, come from a poem about drinking by Kan Chazan, an Edo-period Confucian scholar.
